Grilled Honey Chipotle or Adobo Lime Chicken Thighs
This recipe is universal for either flavor, and produces a terrific grilled chicken thigh that is tender and moist.

- 1 Pound of skinless boneless chicken thighs
- Your choice, Olive and Then Some Chipotle Rub paired with Chipotle Infused Olive Oil, or Adobe Lime Rub paired with Organic Persian Lime Infused Olive Oil

- Begin by rinsing and patting dry chicken thighs. Place them in a shallow dish and salt and pepper them lightly on both sides. Then apply to both sides, either the Olive and Then Some Honey Chipotle Rub or the Olive and Then Some Adobe Lime Rub, shaking on an even coat from the bottle along with a drizzle of Chipotle Infused Olive Oil to pair with the Honey Chipotle Rub, or Organic Persian Lime Infused Oil to pair with Adobo Lime Rub. Let marinate for 1 to 4 hours, or overnight for a more intense flavor.
- Grill thighs over a medium high heat about 5 minutes per side. When done, rest a couple of minutes, and toss with some additional seasoning and a drizzle of oil for whatever flavor you are using. If you want, for the Honey Chipotle style you can additionally toss with a little honey to accentuate its flavor, or use a squeeze of lime juice over the Adobo Lime style if desired.
