Strawberry Mint Bruschetta
Fresh strawberries and mint add exceptional flavor for a summertime appetizer!
  • 1 lb. fresh strawberries, finely chopped
  • 1 tsp. sugar
  • Handful of fresh mint, chopped
  • 1 T. Olive and Then Strawberry Dark Balsamic
  • Freshly ground black pepper
  • 1 crusty baguette, thinly sliced
  • 1 T. Olive and Then Some Basil Olive Oil or Olive and Then Some EVOO of choice, for brushing
  • ½ c. feta or bleu cheese
  1. Preheat oven to 350 degrees
  2. Cut baguette on an angle into thin slices and brush with Basil Olive Oil or your choice of EVOO and sprinkle with salt.
  3. Arrange on baking sheet and bake for 10 mins, flipping half way through.
  4. In a medium bowl, sprinkle strawberries with sugar and let sit for 15-20 mins.
  5. Add mint and balsamic and some freshly ground black pepper.
  6. On toasted bread, spread a thin layer of cheese. Top with the strawberries and mint.
