Maple Balsamic Roasted Brussel Sprouts
Serves: 4-6
  • ◾1 & ½ lbs. brussel sprouts cut in half
  • ◾4 ounces pancetta, ¼ inch cubes
  • ◾1/4 cup Olive and Then Some Butter Olive Oil
  • ◾1-2 Tbs. Olive and Then Some Vermont Maple Balsamic Vinegar
  • ◾1½ tsp. sea salt
  • ◾1/2 tsp. freshly ground black pepper
  1. Preheat oven to 400 degrees. Place brussel sprouts on a baking pan including any loose leaves. (they will become crispy when roasted). Toss with olive oil, sea salt and pepper. Sprinkle pancetta evenly over brussel sprouts and spread evenly in baking pan.
  2. Roast 20-30 minutes stirring once. Brussel sprouts should be tender and pancetta crispy. Immediately drizzle on maple balsamic and serve.
  3. *Pancetta can be replaced with 4 slices of bacon.
